I finally had a chance to try a recipe from Everyday Food I have had for a while. It was an Acorn Squash Soup. I have never made Acorn squash before and It was easy to do in the microwave per the recipe. I will post the link here if you want to take a look. When you put it in the microwave pierce the squash in a few areas with a knife first. There were a few ingredient changes I did to make it vegan. I used vegan butter, vegetable broth and soy milk instead of half and half. I had tasted it before I added the milk and it was also good without it. So now I have made butternut squash, spaghetti squash and acorn squash. This was a tasty recipe.
